Avocado Egg Salad Lettuce Cups

Contrary to what I’ve heard, egg salad is NOT just an old people sandwich for blue haired Granny’s (love you Granny!). Avocado’s are at peak freshness and taste during the Summer and I can’t find enough ways to use them. Subbing avocado’s for mayo kicks the flavor up several notches and adds healthy fats for gorgeous skin and a sexy body. While subbing lettuce for bread kicks the carbs to the curb! This basic recipe is one my Mom would make all the time to keep us crazy kids satisfied, with a few additions of mine of course.

Coolers, buckets, or small tubs for drinks.

  • If you have the space, get a few small containers and fill with ice to keep beer and other drinks cool. Place them in strategic spots so guests won’t be constantly getting up and going to the kitchen for a refill.
Soda or other non-alcoholic drinks.

  • Don’t forget about the non-drinkers in your group, or those who just want to take a break in between brews.

Bottle openers.

  • Invest in a few of these so your guests won’t have trouble hunting one down; the fewer distractions from the game, the better.

Seating.

  • After food and beer, this is the most essential element of your party. Make sure you have enough seats in front of the TV for everyone who’s attending. Ask friends to bring over folding chairs if you don’t have enough, and don’t forget to dig up those lawn and camping chairs you’ve stored for the winter. Put out throw rugs or blankets and scatter some large pillows so that even those seated on the floor can get comfortable.

Spring Garden Prep: Testing Your Soil

Rich healthy soil is a MUST for a flourishing garden. It’s best to test the soil before you begin digging. Check drainage by soaking the soil with a hose, waiting a day, then digging up a handful of soil. Squeeze the soil hard. If water streams out, you’ll probably want to add compost or organic matter to improve the drainage.
